Summer time is my favorite time of year. Some of my favorite things about summer time are spending time with family, being outside and BBQing.
I love making this super simple Bean & Frito Salad.
Ingredients needed:
1 Bottle Catalina Dressing
1 Bag Fritos
1 Can Black Beans
1 Can Pinto Beans
1 Can Garbanzo Beans
1 Can Kidney Beans
2 Tomatoes
2 Small Cans Sliced Olives
Drain all four cans of beans and sliced olives.
Chop up and add tomatoes.
Mix all beans, olives and tomatoes in a bowl with 1/2 bottle Catalina dressing.
Right before serving mix in Fritos.
Enjoy!

My sister, Whitnee made this yummy Veri Teriyaki Bowtie Spinach salad today as well.

Yummy Stuffed Mushrooms {a free recipe}

Stuffed Mushrooms are one of our favorite appetizers. We love them so much that sometimes we eat them as a meal. :)
They are also like everything else I cook, super duper simple.
Hope you enjoy.
Ingredients needed:
8 oz cream cheese
1 package whole mushrooms and stems
1 cup grated cheddar cheese
5 slices bacon
Wash mushrooms then seperate stems and tops.
Chop mushroom stems into small pieces.
Cook baccon, then break baccon into small pieces.
Place cream cheese, bacon and chopped mushroom stems in pan on stove, heat until soft.
This is what your cream cheese mix should look like.
Add cream cheese mix to mushroom tops.
Spread the grated cheese over the mushrooms.
Bake;
350* for 15 minutes. Serve warm.
YUMMO!

Super Simple White Chocolate Popcorn {a free recipe}

Can you believe I've cooked 3 times in the past week?
Okay maybe I've cooked a couple more times than that but trust me, it wasn't anything worth sharing ;)
My idea behind sharing these recipes is to make myself & my family eat at home more often. We eat out way too much so in blogging recipes I'm trying to help myself more than anything :)
So today, I'm sharing one of our favorite snacks. I love this one because it's sooooo quick.
Ingredients needed;
1 package Butter Flavored Microwave Popcorn
1 package Almond Bark, artificially flavored white chocolate

Microwave 1 package of popcorn, place in a freezer safe bowl.
Next, microwave on high for 1:30 two squares of white chocolate. Stirring every 30 seconds.
White chocolate should me smooth and creamy.
Drizzle over popped popcorn, then stir until all popcorn is covered.
Place in freezer for 15 minutes.
And there it is. Delicious White Chocolate Popcorn! YUMMO!

This is what happened behind the scenes as I was making the popcorn.
My 3yr old figured out how to open the pickle jar and eat pickles :)

Have a great weekend!

Home Made Tacos {a free recipe}

Tacos are always another "go-to" food in our home. They are pretty simple and I can usually get my husband to help making the total prep time about 10-15 minutes.
Ingredients needed:
1 packet Mild Taco Seasoning
1 package Mexican Blend Cheese
Ketchup
Ranch
1 lb ground Hamburger
Lettuce
1 Tomato
Flour Tortillas
First, brown the hamburger.
After hamburger is browned put it into a strainer and rinse any grease/fat away.
Return the hamburger to the frying pan and sprinkle 1/2 package of Taco Seasoning over meat. Leave in pan to warm until all other ingredients are ready to be served.
While the hamburger is browning chop up some lettuce.
Chop up the tomato.
Put the grated cheese into a bowl.
Now you're ready to serve.
Warm tortillas in the microwave. We prefer to warm them one at a time for 10-15 seconds.
First place ground beef.
Sprinkle cheese over ground beef.
Next, add lettuce.
Add tomatoes as desired.
Top with Ketchup and Ranch.
My husband will generally add a little bit of hot sauce to his.
We like to eat our tacos with chips and salsa. Mango salsa is a favorite of mine. I generally like to buy the salsa from Costco, but Erin posted a recipe for mango salsa this week that I am definitely going to be trying out.

Hope you're having a fabulous day! I'll be hanging out with my long arm machine most of the day and then off to quilt guild tonight!
